At Bird in Hand Winery, the overriding goal is to grow and produce the best wine possible. Well-known for their premium sauvignon blanc, grapes are harvested in the cool of the night to retain their freshness and flavour, then crushed and pressed to tank where only the purest free run juice underwent cold settling for 36 hours.
Each parcel of grapes was fermented separately in stainless steel tanks to maintain the fresh lovely characters and varietal definition
