The signature recipe for the Aviation Cocktail was featured in Hugo Ensslins recipes for mixed drinks the last known cocktail book published before Prohibition, in 1917. The founders of Aviation decided to create a cleaner, more balanced gin for the perfect Aviation Cocktail. The resulting Aviation Gin is a precise blend of botanicals cardamom, coriander, lavender, anise seed, sarsaparilla, juniper and two kinds of orange peel. Aviation has become an icon of the American distilling movement. As a gin created for bartenders by a bartender, it is a favourite of the mixology world.
