4 avocados cut into 1cm dice
180ml olive oil
Juice of 2 lemons
Salt and pepper
20 cherry tomatoes, quartered
2 jalapenos, seeds removed and thinly sliced
4 heads of butter lettuce, leaves separated, washed and roughly chopped
Croutons, to serve
Combine the avocado, olive oil and lemon juice in a large bowl.
Season to taste with salt and pepper and mix gently.
Add the tomato, jalapeno and lettuce and toss gently to
coat the leaves in the avocado mix.
To serve, arrange the leaves on a large platter with the avocado mix
evenly distributed throughout.
Sprinkle with a small handful of croutons to serve.
