Cunliffe and Waters Baked Eggs

Method

Heat a dash of olive oil in an oven-proof frying pan. Fry chorizo until browned, add red

capsicum, cook until soft, then add the pasta sauce. Bring to a simmer, then make holes in

the sauce and crack in each egg one at a time. Place in the oven at 180C for 10 minutes or

until eggs are cooked as desired. (You can also simmer on the stovetop until eggs are

cooked.)

Garnish with fresh parsley and parmesan. Serve with toasted sourdough.
