Honkaku Shochu means the highest quality Shochu with single distillation. Single distillation extracts flavour and aroma precisely. This Shochu is made with 100% freshly harvested sweet potato (imo). Shochu made from imo has subtle but lovely sweet potato characters. The shochu was crafted on the UNESCO heritage listed island Yakushima south of Kyushu. The climate is very tropical and has beautiful clean soft water. Main fermentation of the shochu was done in 100 years old Chinese ceramic large pots called 'Tsubo'.
