Tequila

How is tequila produced?

A popular distilled spirit that originates from Mexico, tequila is classified as a varietal type of spirit due to its specific production process and the exclusive use of blue agave as the main ingredient. The agave plant, which typically takes around 8 to 12 years to mature, is harvested and its core, known as the piña, is extracted. The piñas are then roasted, mashed, and fermented before undergoing distillation to produce the final product.

What are the different varietals of tequila?

There are different types of tequila, which are categorised by the ageing process. Blanco or silver tequila is un-aged and exhibits the purest expression of the agave flavour, making it an excellent choice for cocktails. Reposado tequila is aged in oak barrels for a minimum of two months, offering a smoother and more complex taste. Añejo tequila is aged for at least one year, providing richer and more intense flavours with hints of oak and caramel. Lastly, Extra Añejo tequila is aged for a minimum of three years, creating a luxurious and refined character.

What foods pair well with tequila?

Tequila is a versatile spirit that pairs wonderfully with a variety of flavours. Traditionally, tequila is sipped with lime and salt used as accompaniments to complement its unique taste. However, its earthy and vegetal notes make it a great match for grilled meats, particularly fajitas or carne asada; it also makes a great companion for seafood dishes such as ceviche or shrimp cocktails. For a more adventurous pairing, try tequila with spicy dishes like enchiladas or chilli-infused chocolates.
