A twice distilled single malt whisky. We ferment Australian malted barley with brewers yeast for an extra flavourful craft finish. Solera is fully matured in carefully selected apera casks, an Australian fortified wine that's similar to sherry. The traditional way we blend solera means there is a drop of our original cask in every bottle. Sipped neat, over ice or shaken up in a classic cocktail.

KOVAL Four Grain Whiskey 500ml

The Four Grain whiskey of the KOVAL distillery is an interesting bend of 40% Oats, 40% Malted Barley, 10% Wheat, 10% Rye. All the grains are sourced locally in the Midwest and come from organic farms. The KOVAL four grains, like all their other whiskies is made of a single malt, single distillation, single barrel and are certified organic and kosher. 94 proof.

For this whisky, Australian red wine barrels have been individually selected and kept exactly as they leave the winery to take advantage of a uniquely Australian red wine profile. The barrels are not charred, to retain the wine to oak character.

The latest Starward Projects release, UNEXPEATED is a limited release whisky that has seen the old world and new worlds collide. We started with our juicy signature red wine barrel aged single malt whisky. Then we swerved from the expected. Heavily peated whisky barrels direct from Islays finest distilleries gave our whisky a maritime peat character never yet tasted in Starward whiskies.

Flavours of crunchie bar. All shortbread and honeycombe; the sweetness drops a notch as oak and spice overlap the initial aroma. Light to medium bodied, exceptionally soft textured. Mildly spicy, dilute toffee apple burst at mid palate fades into a delicate, clean, drying aftertaste.

KOVAL Distillery creates an extraordinary line of whiskey, gin, and specialty spirits using unique grains, signature “heart cut” techniques, and only the absolute best quality distillate. All spirits are certified organic by Midwestern Organic Services Association (MOSA) as well as certified kosher through the Orthodox Union (OU).

Mars Iwai Tradition Japanese Whisky is soft and rounded, yet full bodied and mellow.Mars Shinshu distillery is located high in the Japanese Alps in Nagano Prefecture at around 800m above sea level. Next door, there is beer brewery called Minami Shinshu Brewery. Pure mineral water from the mountain is used for both whisky and craft beer making and both facilities are surrounded with beautiful clean air. Short hot summers encourage whisky maturation, and long cold winter gives whisky slow and gentle maturation as well as a break.

After 3 years aging in traditional oak barrels, this selected single malt whisky is then further matured in casks used in the production of India Pale Ale to provide a subtle and give unique essence of beer character.

Woodford Reserve Kentucky Straight Bourbon Whiskey 700ml

The Woodford Reserve Distillers Select is heavy with rich dried fruit and hints of mint and oranges covered with a dusting of cocoa. Faint vanilla and tobacco spice. The palate is rich, chewy, rounded and smooth, with complex citrus, cinnamon and cocoa. Toffee, caramel, chocolate and spice with silky smooth, almost creamy at first with a long, warm satisfying tail.

Starward Fortis Australian Whisky 50% 700ml

Fortis meaning brave, bold, is a full bodied, full flavoured whisky that celebrates local Australian ingredients. Bottled at a higher ABV of 50% and non chill filtered, this whisky is fully matured in 100% American oak red wine barrels, predominately sourced from the Barossa Valley. These barrels, which previously held big Australian bold reds like cabernet and shiraz, offer a fuller and richer mouthfeel to this single malt whisky. Starward Fortis is blended in batches, meaning each batch will be unique but will maintain the core flavour profile and intensity.

KOVAL Bourbon Whiskey 500ml

Handmade in Chicago, Koval Bourbon is made of a very unique blend of 51% corn (minimum legal) and 49% Millet grains. Millet is an ancient grain that gives interesting, exotic fruit aromas to this Bourbon. The low corn content, and the fact that no sugar nor caramel have been added, gives it a dry finish while having a beautiful complexity of aromas on chocolate and fruit notes.
