Spencer Cocoa chocolate is made from scratch, bean-to-bar, using cocoa beans grown on the island of Malekula, Vanuatu. Chocolate-maker Luke Spencer travels to the island each harvest to catch up with the growers and buy new-season cocoa. Spencer Cocoa buys directly from a small group of families who grow, harvest, ferment and dry the cocoa ready for shipping to Australia.

These beans are roasted, ground, conched, tempered and hand-molded into chocolate in Mudgee NSW.
