Assyrtiko is a white Greek wine grape indigenous to the island of Santorini. And now planted in Australia too! It has the advantage of maintaining high acidity, despite being grown in warm climates. The Assyrtiko grape can be very similar to Sauvignon Blanc, with its citrus flavours and high acidity. But there's more complexity with notes of orange blossom and jasmine, plus some spicy ginger and saline characters. It's the perfect wine to drink in the Australian or Greek summer, paired with seafood or simply on it's own.
