It’s that pink grapefruit / lemon sherbet that hits first in the mouth; settling front and centre surrounded by savoury toffee and green apple finishing with lashings of sour peach. Subtle herbaceous notes of lemon thyme and blood orange round out a palate that is surprisingly layered and finely balanced. There is a pleasing, gentle astringency in the mouth that helps pull these elements together and the finish is all zingy, crunchy natural acid. Mouth-wateringly bone dry.
