Red - big, bold, full-bodied

Palate

Fruit depth yet a balletic acidity. Richness but a minerality and innate tannic structure and, indeed, reverie. Some fruit sweetness and then a flash of liqueur chocolate, after which comes a lightness and freshness of being. Earthy shiraz, depth and tannin from petite sirah, and fruity plushness and aromaticity from grenache. Not so much a blend as a new way. A trinity.

Duck Confit, Roasted Goat, River Fish Cutlets grilled over vine cuttings served with Gratin Dauphinois. Serve in large rounded glasses and serve at cellar temperature, letting the red wine come up to ambient speed over luncheon.
