Apricus Hill, established in 1995, is the highest vineyard in Denmark on Western Australia’s south coast. At 750 feet above sea level and with panoramic views of the Southern Ocean, the vineyard experiences a true maritime effect with cooling ocean breezes, making it a true 'cool climate' vineyard. A thoroughly modern West Australian Chardonnay is produced utilising only free-run juice, and it is then enriched with maturation in older oak. The oak was steamed (not toasted) to deliver a pleasing depth while retaining freshness and fruit flavours.

Palate

Nectarine and mandarin are complemented by a textured savoury mid palate with hints of melon and spicy vanillin oak leading to a long crisp grapefruit finish. A vibrant lifted nose of citrus and stone fruits with savoury cashew notes and hints of gunflint and toasty French oak.

”The team limit themselves to the free run juice for this fine Denmark Chardy, which then sees maturation in a range of larger format French oak for around nine months. Pale lemon/green, this is a most attractive, subtle and elegant style of Chardonnay. There are notes of gentle citrus with florals, stone fruits, peaches, florals and hints of cashewy oak. A wine of medium length which is clean and fresh, and finely balanced throughout, with a gently lingering finish. Five years. Definitely recommended.”
