The Heirloom Vineyards Assen’s Fortalice Chardonnay was produced from our best Adelaide Hills Vineyard near Charleston, whose clones and viticulture embody the very best in cutting edge but old school viticulture and winemaking. This wine has matured for 9 months in 50% new oak and second use French oak with the balance in 3 to 4 year old French oak. This wine, both simple and effortlessly complex, champions the pristine fruit quality of this Adelaide Hills vineyard. In the cooler months we enjoy it alongside a calamari risotto. Pour some into a glass and some into your risotto for a beautiful depth of flavour. We like it cool but not icy.

Palate

Clear and balletic acidity jigsaw the flavour components neatly together. Some phenolic grip asserts, and then clear and clean fruit flavours of green apples and peaches and white nectarine land. The wine’s texture is at one moment a concentrate, and then immediately freshly fallen rain. The palate therefore seems swift - and yet underneath moves a gentle tow of more complex and mesmerising, mermaidian currents. Catch me if you can or tie yourself to the mast.

Food Pairing

Spring Pea and Bacon Risotto or calamari risotto or Waldorf salad

”Matured 9 months in French oak (50% new). Quite a mouthful of a name, but in the mouth it delivers a supreme elegance, no edges, just a finely controlled cool-climate poise. Crunchy lemon, lime, nashi pear, quince and a touch of savoury almond skin and biscuit rise from the glass. They gather on the palate, integrated and complex, given life and energy by brisk acidity. Could enjoy now but there's more to come.”
