This Heirloom Vineyards Velvet Fog Pinot Noir was produced from our best Adelaide Hills Vineyard in Kersbrook whose clones and viticulture embody the very best in cutting edge but old school viticulture and winemaking. Hand tended vines, sorted bunch by bunch, naturally open fermented, basket-pressed. This wine is 50% whole bunch and is aged in 2nd and 3rd use French oak barriques from bespoke coopers for seven months.

Wine Style

Red - bright, silky, light-bodied

Palate

Silky yet textural - the ‘feel’ of the wine is what strikes you at first sip. The palate is a progression of hand-in-hand acid and fruit ending in a small flak-like burst of smooth tannins. The fruits pop out along the way like Saints in an Advent calendar. A round, full, giving red wine yet with a determined structure and smoothing tannins. Plums and rhubarb; berries and aromatic herbs, such as thyme and tarragon; dark fruits lurk.

Food Pairing

Rabbit stewed with balsamic vinegar; chicken stewed with Beaujolais; or a hearty fish stew cooked with a near nothing of sherry vinegar

”Wild fermented; bottled without filtering or fining. A really interesting and pleasing flavour profile that leans into bitter cherry, amaro-like characters, juniper, pepper, thyme – and we have a ripper of a pinot noir that goes savoury and structured. Very fresh feeling, too. The name would suggest something more loose-knit and easygoing, this is serious architecture and savouriness instead. And great for it. A distinct pinot noir that may polarise some for its herbal lean and veins of minerally tannin, but it is compelling.”
