Hippocampus is one of a new wave of locally distilled, hand-crafted products made in Australia.
Using biodynamic farmed wheat from Australia's Wheatbelt, fermented in small tanks using an organic yeast and then distilled in a custom-made copper pot still, the Hippocampus team has crafted a clean and textured vodka.
On the nose an aroma of vanilla and fruit comes through. On the palate clean and rich with a super smooth mouthfeel from distilling multiple times - enough to ensure we embrace the soft sweet flavour of the wheat but not too much to strip away this wonderful texture.
