Pan Seared Butter Basted Steak
”90/5/5% cabernet sauvignon/petit verdot/merlot. Up to 30 days on skins, matured in French oak for 14 months (20% new). The nose is very restrained right now, the flavours clustered at the back of the palate. This has cassis and an earthy rumble in the tannins. It will benefit greatly from a decant, to help loosen up the strings and open up the fruit. Right now, it is very compact and restrained. Elegant though.”
