Traditional method sparkling wine from cool vineyard sites in central and western Victoria. Winemaker John Harris spent 8 years at Yarra Valley sparkling super-house, Domaine Chandon, where he honed his craft, before venturing out on his own to create Sabre. A blend of Chardonnay 78% and Pinot Noir 22% this generous yet finely chiselled wine spent 3 years on yeast and delivers great finesse, complexity and length.

”78/22% chardonnay/pinot noir. The chardonnay hails from the Macedon Ranges, the pinot noir is a blend of Henty and Pyrenees. Love the cut and thrust of this ultra-fine, complex sparkling, its cool-climate sourcing producing a wine of real class. Former Domaine Chandon sparkling winemaker, John Harris, continues to astound now that he is out on his own. Natural acidity brings real drive and a strong linear focus. Flinty on the nose with chalky lemon, apple, stone fruits and nougat, it moves into a complex whole on the palate. Three years on yeast lees release a lovely nutty intricacy of flavours, spice and texture. A top Aussie sparkling.”
