”Crushed and fermented cool; seasoned French oak for 12 months. The gentle vinification has rendered a relatively pale colour, but that is a ruse, with ample flavour evident on the nose and confirmed by the palate. Cherries, black and ripe red, and raspberries feature, along with redcurrant jelly, a sprinkling of celery salt and a dusty kick of earth. There’s fleshy and fruitful intent on the palate, but cool, fine tannins and perky acidity provide an assertively fresh foil.”
