A selection of wines that embody our connection and loyalty to the Margaret River land. When we make these wines, there is no compromise. A universally iconic variety that Margaret River has built its name on. The unique Margaret River environment creates a cabernet completely differently. Margaret River cabernet has three things, berry, cassis and capsicum, the first two are fairly common, but the capsicum is unlike cabernet of other regions.
Paladin Hill wines exemplify Wills Domain’s aspiration to achieve the pinnacle of winemaking and site husbandry. We approach this top tier range with low-intervention winemaking and absolute attention to detail, assuring the vines deliver low yields, varietal fruit intensity and definition, benefitting from Margaret River’s renowned environmental purity. These wines are perfect if you are collecting for the future: lay down a few bottles now and be assured of a superb taste and finish after a few years of cellaring. Halliday gives Wills Domain an almost perfect 5 Red Star-rating as a winery and our Paladin Hills range has well-deserved top ratings of its own.
The Moonrise Kingdom of McLaren Vale Shiraz Grenache Petite Sirah symbolises our Firehawk Farm, a single biodynamically run vineyard perched atop an ancient ridge overlooking McLaren Vale, the Willunga escarpment and the Gulf St Vincent.
The Reschke Armenta Museum Release 2016 Cabernet Sauvignon shows creme de cassis, cigar, fragrant spice and roasted hazelnut aromas. This wine delivers equal weight and ripe fruits intensity. Superbly fruited and complex wine from a back vintage.
A delightful Barossa blend that harnesses the full flavour and generosity of Shiraz with the highlights of spice, tannin and savoury characters provided by a dash of Mataro. All hand picked fruit is estate grown in Greenock and certified organic and biodynamic.
The Petit Family have been winemakers from father to son and daughter since 1890, always based in the beautiful terroir of Entre-deux-Mers. In the family, they've always passed on the values connected to the winemaking profession: respect of our terroir, of the nature that surrounds us and the whole biodiversity that makes its richness
This cabernet sauvignon embodies a fruit-driven wine with rich notes of blackcurrant, plum, and morello cherry. Touches of oak, chocolate, and vanilla bean complete the rich round palate.
This Richardson Reserve Cabernet Sauvignon wine was produced from the most exceptional batch of grapes identified by the Blue Pyrenees team as “better than ever”, the same philosophy established in the 1990’s to create exceptional Blue Pyrenees red wine as a tribute to the late Colin Richardson. It is the pinnacle of our Estate range of wines.
This Heirloom Vineyards Pinot Noir was produced from their best Adelaide Hills Vineyard in Macclesfield whose clones and viticulture embody the very best in cutting edge but old school viticulture and winemaking. Hand tended vines, sorted bunch by bunch, naturally open fermented, basket-pressed, stored in 25% new French oak barriques for 7 months.
This delicious Barossa Shiraz spent 15 months in a mix of French and American oak, 20% new. A beautifully refined nose, this has some of everything. Or so it seems. A bright but deep maroon hue, we have cassis, cranberries, bay leaves, florals, mulberries, spices and coffee bean notes. Good focus, fine tannins and very long on the finish. This is marginally more elegant than your typical Barossa Shiraz, something many will love.
Summers in McLaren Vale are often accompanied by the arrival of magnificent Cape Barren Geese. These rare and striking birds, once feared near extinction, are the inspiration for our name.
Pinot Noir is becoming a key variety for the Adelaide Hills. Displaying sweet cherries and cloves this is a delicate but full flavoured wine. This pinot noir is cold soaked for 24 hours to infuse the colour of the fruit and bring a lively kick to the palate. Hand plunged and open fermented in 100% French oak, of which 30% is new.
