This wine captures the elegance and restraint of this cool vineyard site.
There are those that argue Orange is where Shiraz ultimately finds its own balance in Australia. This cool climate Shiraz has hints of white pepper and spicy fruit flavours which pair perfectly with lamb and other slow cooked meat dishes.

Forest Hill Vineyard is not only the oldest cool climate vineyard in Western Australia, but also planted on one of the Mt Barker regions first farms. Settled in the 1840’s, Highbury Fields is a site of historical agricultural significance in the Great Southern, which over the past century has been farmed for apples, dairy, grains, lamb and wool. Purchased over 15 years ago, the Highbury Fields property is today producing exceptional fruit with the dry-grown vineyards occupying the best soils on this historic property.

The village of Bethany was the first settlement in the Barossa Valley, established in 1842. The first vines on Bethany Estate were planted in 1852, the beginning of a passion and tradition that continues on today within the Schrapel family, six generations later. This is vibrant McLaren Vale shiraz at its best. The Aroona vineyard is located in the foothills of the Willunga range. The soils are a stony loam and contain the remnants of the mountains that were once as high as the Himalayas! The vines range in age from 99 to 25 years old. The vineyard typically produces aromatic wines with fine tannin and a full yet soft palate.
This elegant cool climate Shiraz, has an intense varietal flavour and finely integrated oak. This Shiraz is hand-picked from a small parcel of fruit. It is then open fermented in 100% French oak, 30% of which is new. It gives depth of flavour and a lingering finish. Smooth and warm on the palate.

A Barossa Valley classic premium blend of shiraz and cabernet, medium bodied, with a ripe and juicy berry flavoured palate, velvety tannins, balanced with a plush fruit finish
Each year the blend of shiraz and cabernet sauvignon is assessed based on the fruit when it arrives in the winery. The 2021 vintage is a blend of 80% Shiraz and 20% cabernet sauvignon. The fruit was harvested in the cool of the early morning to retain all the natural acidity. A portion of the cabernet sauvignon was aged in seasoned French oak barriques while a portion of the shiraz was seasoned in French and American hogsheads and barriques each for around 12-13 months. Minimal winemaking intervention with the use of a uniquely designed gravity 'lift' tank.
