A tribute to Maurice O’Shea, this wine takes its name from his old ways of naming wines by style rather than variety. Hand picked and cold soaked for five days. A rigorous pumping over routine followed inoculation with the wine pressed off at dryness. Transferred to 45% new French oak barriques and puncheons for 12 months before blending.
