Small parcels of mature vineyard (40-70 year old) shiraz predominantly sourced from the Upper Tintara and McLaren Flat subregions of McLaren Vale, were carefully hand-picked then fermented in small five tonne opera fermenters. The wine was then gently pressed in a 93 year old basket press ensuring gentle extraction of tannin from the skins. Matured in French oak barriques for sixteen months, the wine was artfully barrel selected then blended to achieve this classic McLaren Vale Shiraz.
