This wine is dedicated to a forefather of the Salomon family who had established St. Ignatius College in the Adelaide suburb of Norwood in 1870. The grapes ripen on the Fleurieu Peninsula, home to small historic villages that dot the region’s rolling hills. The midday heat is balanced by cool afternoon winds rolling off the nearby Southern Ocean. The vineyards on the Fleurieu Peninsula extend south of Adelaide, including McLaren Vale, Adelaide Hills and the Southern Fleurieu Peninsula. The soils are a mix of gravel, glacial sands as well as red and orange clay.

This densely compact wine is woven with a fine tannic thread, dutiful oak supports and bright acidity, giving form to a parade of black fruit, coffee, bitter chocolate and currant. Liquorice all sorts and violet, too. A wine that struts a warm climate generosity without straying into excess, while priming the heady fruit flavours with a maritime salinity.
