Using a Grenache specific yeast IOC R9008, pump over was more constant along with medium toast French oak treatment during ferment with 10days on skins. Pressed off skins and finished primary ferment on lees then racked off lees once sugar dry. Completed malolactic fermentation then racked, cold stabilised, centrifuged and cross-flowed to bottle ready state.
