The 2019 Tim Adams Semillon is a wine with great aromatic intensity and complexity that follows the traditional ‘bordelais’ winemaking approach to the variety. The variety’s herbal and stone fruit characters are complemented by savoury elements of toast and spices as a result of fermentation and maturation for 8 months in carefully selected new French oak barrels. The extended contact with light fermentation lees delivered a dry wine with a rich palate and creamy texture supported by a precise lingering acidity. Highly recommended to have with food, in particular richer seafood dishes or pasta-based dishes.’
