This wine is sourced principally from the Wills Domain vineyard in Yallingup, with 40% coming from a southern Margaret River vineyard which introduces some tropical fruit and heightened elegance to the palate. Machine picked in the cool of the morning, the fruit was machine harvested, gently destemmed, and pressed before being cold settled for three days. Once clear the juices were racked and inoculated with a cultured dried yeast and fermented gently at 13-14 degrees for two weeks. Once dry the wine was racked off gross lees and left on light fluffy lees before fined, stabilised, filtered and bottled. 2022 in Margaret River was outstanding. Following a relatively wet winter the spring was mild with a warm dry summer. Fruit set was even disease pressure low, and the abundance of Marri blossom kept bird damage to a very low level.
