Ardbeg An Oa 700ml

A smooth, creamy texture leads into a huge syrupy sweetness, flavours of milk chocolate, treacle toffee, aniseed, orange and smoky tea leaves. Gentle, sweet spices (nutmeg & cinnamon), some cigar smoke, and a very unusual flavour of grilled artichokes. Wood is always present in the spirit, gently nutty and reminiscent of a carpenters workshop. A long, sweet finish, with floral overtones, mint toffee and some gentle malty biscuit notes.

Ardbeg An Oa is the fourth permanent expression to be added to the Ultimate Range. The gathering together of several cask types  including Pedro Ximenez, virgin charred oak and ex-bourbon  is what makes Ardbeg An Oa unique within the core range. The Balvenie 14 YO Caribbean Cask Single Malt Scotch Whisky 700ml

The Balvenie Caribbean Cask 14 year old single malt whisky has been matured in traditional oak whisky casks for 14 years, and then ‘finished’ in casks that previously held Caribbean rum. To create the ideal finish Malt Master David C. Stewart MBE filled American oak casks with his own blend of select West Indian rums. When he judged the casks to be ready, the rum was replaced with the 14 year old spirit and the wood was put to work adding the final touches. The result is an exceptional single malt whisky with the traditional smooth, honeyed character of The Balvenie married with notes of toffee and a hint of fruit, with a warm, lingering finish.

Hickson House Oyster Shell Small Batch Gin 700ml

Contributing to a more sustainable environment by using freshly shucked oyster shells from the distillery restaurant and adding them to the distillation process.  The oyster shells provide natural minerals to create a smooth texture and creamy mouthfeel to the gin. They also use seaweed and old man saltbush to enhance the savoury, subtle saline and briny notes

Aged to perfection. Blending modern and traditional distilling techniques, añejo was first introduced to the world by Casa Herradura in 1962. Since then Herradura Añejo has aged in American White Oak barrels for 25 months – an incredible 13 months beyond industry standards. The result is a remarkably smooth, amber-colored liquid that melts on your tongue leaving notes of cooked agave, toasted oak and dried fruit.

The Jameson Black Barrel Irish Whiskey uses double charred casks for richness and complexity. The palate features intensified notes of vanilla sweetness and caramel, alongside toasted wood, fruit and warm spice.

Martell VSOP Cognac 700ml

For three centuries, Martell has produced, exported and marketed cognacs which are recognised worldwide for their outstanding quality and finesse, obtained through double distillation of exclusively clear wines and ageing in fine grained oak casks. Uniquely, however, for Martell VSOP Aged in Red Barrels, the Martell Cellar Master selected oak casks already used to age eaux-de-vie, where the influence of tannins is even less pronounced. Known as futs roux owing to the reddish tinge of their wood, these precious barrels have reached the perfect stage of maturation for both the oak and the eaux-de-vie, thus allowing for an ideally balanced exchange between the two. Not only are they able to fully express their natural fruit aromas but these blend harmoniously with subtle woody overtones from the red barrels of fine-grained oak, resulting in an exceptionally rich and refined cognac that is an authentic expression of the Martell style. The nose is bittersweet softness of lime and liquorice, the crystallised fruit of quince, raisin and plum, and the spring undergrowth scent of oak wood and hazelnut. The palate is soft, mellow and complex with crystallised-fruit notes. An ample, round body and a long finish.

Hakushu 12YO Single Malt Japanese Whisky 700ml

The Hakushu Distillery was founded half a century after Yamazaki. Keizo Saji, the second Master Blender, inherited his father’s quest to push the boundaries of what a Japanese whisky could be. He had searched all over Japan for high quality water that would produce the most delicately aromatic whisky. After searching with tenacity to the headstreams of rivers and deep into rugged mountains, he found Hakushu. The Hakushu Distillery is one of the highest distilleries in the world, built amidst the deepest forests of Mt. Kaikomagatake in the Japanese Southern Alps. The majestic forest that surrounds the Hakushu Distillery shelters an abundance of plant varieties reflecting the many expressions of Japanese nature. The malt whiskies born here are simultaneously blessed with a very particular microclimate, verdant forests, and water offering a rare softness only made possible by filtration of rain and snow through thousand-year-old granite rocks.
 
 
Hakushu 12 Year Old is the heart of the brand. Green with herbal notes, it is distilled in direct-fire pot stills, then aged in small white oak casks for 12 years or longer. Balvenie 21 Year Old PortWood is an exceptional Single Malt Whisky, expertly refined over many years to reach the pinnacle of full rounded characterful taste perfection. Malt Master David Stewart, who has worked at the Distillery for over half a century is responsible for crafting the whisky in a single distillation and ageing it for 21 years in port casks to enhance and enrich the full boded single malt, whilst preserving its original characteristics. Four Pillars Bloody Shiraz Gin 700ml

Bloody Shiraz Gin is a combination of the Four Pillars Rare Dry Gin and some of the best Shiraz grapes in Australia. Yarra Valley Shiraz grapes were steeped in gin for eight weeks.

The fruit was de-stemmed but kept mainly as whole berries, and the tanks were kept cold and stirred daily. After eight weeks the fruit is pressed before blending with more Rare Dry Gin.

The resultant gin is an incredibly rich, deep purple colour, which turns iridescent pink when mixed with tonic or soda. Unlike Sloe Gin, the alcohol is 37.8% (rather than &lt;30%) so it packs a punch and is ideal in a range of cocktails.

The Balvenie DoubleWood 12 YO Single Malt Scotch Whisky 700ml

A classic, iconic release, launched in 1993. This whisky has spent 12 years in traditional whisky casks, American oak ex-bourbon barrels and hogsheads. Mellowing the maturing spirit and imparting warming layers of vanilla spiciness. This is then moved to Spanish oak ex-Oloroso sherry casks for an additional nine months to increase complexity, bringing fruity, honeyed depths to the resulting Single Malt. Finally the whisky is then transferred to large oak vessels called “tuns” for 3-4 months to allow the whiskies to “marry” the whisky’s. This is an excellent introduction to a matured whisky for your collection and would also make the perfect whisky gift for a loved one.

Four Pillars Spiced Negroni Gin 700ml

Four Pillars Spiced Negroni Gin is a highly aromatic, rich and (yes) spicy gin with great power and intensity.

This gin was originally the result of a conversation between Cameron (Four Pillars distiller) and Jason (one of the World’s Top Ten Bartenders) back in 2014 - they wanted to create a gin specifically for the Negroni.

Something to cut through Campari and vermouth. And while Negroni has always been a favourite at Four Pillars, Cameron jumped at the chance to make the first collaboration in their Bartender Series a tribute to the very definition of a perfectly balanced cocktail. First, they took base botanicals and upped the amount of Tasmanian pepperberry leaf and cinnamon. Then they added an exotic West African spice called Grains of Paradise.

This is one of the most unusual spices in the world, with clove and sichuan characters.  But although very powerful, the spice tends to glow rather than become hot. The Four Pillars team also decided to use beautiful organic blood oranges in the botanical basket, as well as some ginger.  These wonderfully fragrant fresh botanicals help lift the spice to another level. 

Bushmills Single Malt Irish Whiskey 10yo 700ml

Bushmills is a truly unique Single Malt from the oldest licensed whiskey distillery in the world, first licensed in 1608. The pure water used in Old Bushmills flows over the basalt rock which is visible in the spectacular formations of the world famous “Giants Causeway.” The malt is entirely unpeated and thus the smokiness associated with Scotch malt is entirely absent from Bushmills. In addition to this, every drop is carefully distilled three times for purity and smoothness (most malts are distilled only twice). Bushmills is then left to mature for a minimum of ten years in select bourbon oak casks and Oloroso sherry casks. The result is a smooth, rich Single Malt with overtones of vanilla, honey and sherry.
