Palate

Dry. Long. Searing acidity coupled to a textural mouthfeel. And then a deep core of tightly wound and pristine, pure citrus fruits: lime, lemon, some mandarin and then small, tart oranges; kumquat and grapefruit. The acidity cleans everything away at the back palate, refreshed as if sluiced by soft, cool mineral water. The steely spine and structure is undefeatable, however, and you are once again ready for another sip.
