The Junmai Daiginjo from TOJI Sake is brewed by a multi award winning brewmaster in Niigata, Japan, and is considered to be amongst the highest grade of sake produced in Japan, ensuring purity in production. The Koshi Tanrei rice used in the production of the TJI Sake Junmai Daiginjo is derived from the legendary Yamada Nishiki variety which is typically rich in aroma and taste. During the production of Junmai Daiginjo sake, the rice grains are polished to at least 50%, removing impurities in the process. The water from the Asahi mountain range Niigata is super soft, making the sake dry and crisp in taste a distinct characteristic of Niigata sake, making TJI Sake Junmai Daiginjo a perfect pairing with lighter dishes with its pure and crisp characteristics.
