We've had a thing for yuzu for a while, and with three limited-edition trial runs under our belts, we launched the newest member of our core range: a stand-alone, honed and perfected Fresh Yuzu Gin. A bright, aromatic and (yes) fresh dry gin made with locally-grown yuzu and inspired by our adventures making gin with Japanese friends.

Four Pillars 2024 Christmas Gin 700ml

To make this special annual release, Four Pillars distill all the ingredients needed to make a perfect Christmas pud, then age the liquid for a year in 100-year-old Muscat barrels. The resulting gin has aromatics of classic juniper and a hint of cinnamon, backed up with a rich palate and a hint of sweetness from the Muscat. Sip it neat, mix it with ginger ale or beer, or try it in some great cocktails.

Four Pillars Spiced Negroni Gin 700ml

Four Pillars Spiced Negroni Gin is a highly aromatic, rich and (yes) spicy gin with great power and intensity.

This gin was originally the result of a conversation between Cameron (Four Pillars distiller) and Jason (one of the World’s Top Ten Bartenders) back in 2014 - they wanted to create a gin specifically for the Negroni.

Something to cut through Campari and vermouth. And while Negroni has always been a favourite at Four Pillars, Cameron jumped at the chance to make the first collaboration in their Bartender Series a tribute to the very definition of a perfectly balanced cocktail. First, they took base botanicals and upped the amount of Tasmanian pepperberry leaf and cinnamon. Then they added an exotic West African spice called Grains of Paradise.

This is one of the most unusual spices in the world, with clove and sichuan characters.  But although very powerful, the spice tends to glow rather than become hot. The Four Pillars team also decided to use beautiful organic blood oranges in the botanical basket, as well as some ginger.  These wonderfully fragrant fresh botanicals help lift the spice to another level. 

Prohibition Christmas Gin 500ml

Prohibition Christmas Gin is a delightfully bright and decadent expression. Lashings of figs from the Adelaide Hills are elevated with cherries and late harvest chardonnay grapes. All manner of Christmas spices such as cinnamon, nutmeg, and cloves work in harmony with Riverland citrus in this true spirit of Christmas. As always, it is perfect served in a Yuletide-styled French 75, drizzled on Christmas pudding, or enjoyed with ice cream for a festive, epicurean dessert.

Qantas, Rockpool and Four Pillars joined forces to make a gin that combined the spirit of Qantas, with Rockpool’s style and the essence of everything that is Four Pillars gin. Rockpool mixologists, along with Four Pillars distiller Cameron Mackenzie, handpicked the botanicals that created this unique and delicious gin. 

With Red and Green Szechuan, Quandong, Macadamia nuts, fresh grapefruit peel, tangelos and Rosie Glow apples; combined with the traditional Four Pillars botanicals, the result is an Asian-inspired Modern Australian gin with softness and spice. Gin lover’s taste buds will be singing from the rooftops the world over.

Awarded a Gold Medal at the recent Hong Kong International Wine & Spirits Competition

After experimenting with some exclusive batches of our Navy Strength, Four Pillars decided to add fresh Byron Bay finger limes, along with our beautiful organic oranges. So, they release just one edition of this gin each year, when they’re in season. The finger limes highlight the Asian spices like coriander and star anise, and are complemented by the addition of fresh ginger. Finally, fresh turmeric adds a fresh but earthy quality. The resulting gin has lifted aromatics of lime curd, pine needles, and fragrant spices with a vanilla character which pulls the spices together. The palate is intense -sweet and juicy -but it is still very clean. The turmeric has added weight and earthiness to the palate.

Hendrick's Lunar Gin 700ml

Hendrick's Lunar is the second limited release from Master Distiller Ms. Lesley Gracie's Cabinet of Curiosities at the Hendrick's Gin Palace.

Ms Gracie is known for a spot of midnight gardening and regularly tends to her blossoming collection of botanicals under the influence of moonlight. It was here one moonlit evening, whilst tending to the botanicals in her beloved hthouse, she was inspired to create this refreshingly rich, warm, alluring gin. Hendrick's Lunar Gin is an intriguing combination of the refreshing, the arm and the floral and is designed to be shared and savoured of an evening as the sun goes down and the moon charges the sky.

Hickson House Oyster Shell Small Batch Gin 700ml

Contributing to a more sustainable environment by using freshly shucked oyster shells from the distillery restaurant and adding them to the distillation process.  The oyster shells provide natural minerals to create a smooth texture and creamy mouthfeel to the gin. They also use seaweed and old man saltbush to enhance the savoury, subtle saline and briny notes

Ester Dry Gin 700ml 43%

The Ester Gin chronicles began eight years ago in Sydney. Unashamedly inspired by an obsessive quest for the perfect Negroni, talented hospitality veterans Felix Clark and Corinna Kovner began their distilling journey with a 20-litre coffee-boiler still in the back yard of their Newtown digs.

Initially, it was a slow burn while the running of two successful cafes in Sydney and important life admin took precedence. The penny finally dropped in 2020 when their Ester Strong Gin won Best in Show at the Australian Gin Awards. One of the judges took Clark aside, proclaiming Ester’s Strong to be “The best Gin I’ve had in my life”. There would be no turning back.

Simply a classic London Dry recipe, with an Australian influence in the form of Australian native Oldman Saltbush. A clean, classic gin with a hint of salinity. Makes a savoury style martini.

Plymouth Gin 1Litre

Blind Tiger Organic London Dry Gin 700ml

A combination of organic botanicals creates a London Dry Gin that is a perfect mixer with tonic or soda and a great base for one of the hugely popular gin based cocktails.

In the 1920s, the era of prohibition, a Blind Tiger was an establishment known to illegally sell alcohol, with a focus on celebrating the exciting flavour and taste of liquor cocktails, many of which were gin based.

Four Pillars Bloody Shiraz Gin 700ml

Bloody Shiraz Gin is a combination of the Four Pillars Rare Dry Gin and some of the best Shiraz grapes in Australia. Yarra Valley Shiraz grapes were steeped in gin for eight weeks.

The fruit was de-stemmed but kept mainly as whole berries, and the tanks were kept cold and stirred daily. After eight weeks the fruit is pressed before blending with more Rare Dry Gin.

The resultant gin is an incredibly rich, deep purple colour, which turns iridescent pink when mixed with tonic or soda. Unlike Sloe Gin, the alcohol is 37.8% (rather than &lt;30%) so it packs a punch and is ideal in a range of cocktails. 

Hear Me Roar Gin 700ml

A beautiful single batch gin created from Tasmanian pepperberry, native fingerlime and blackcurrant leaf. The perfect summer gin with the pepperberry adding spicy notes, the fingerlime giving a lovely depth and blackcurrant leaf adding softness across the palate. This is a not for profit gin, made only once and all profits will go towards supporting women in the wine industry. Created by a winemaker/distiller in collaboration with a vigneron.
